Lamb and Vegetables Couscous
Ingredients
- 1 small tomato
- 2-3 tbsp couscous
- 1x 120g pouch Heinz Lamb & Vegetables with Ricotta
- 5g spinach leaves, stems removed and sliced
- Finely grated cheese for serving
Method

Step 1
Cut a cross in the base of tomato and plunge into boiling water for 30 seconds. Then place into a bowl of cold water to cool. Remove skin, then halve to remove seeds. Roughly chop.

Place couscous in a small bowl and pour in 2-3 tablespoons boiling water. Allow to sit for 1 minute, then fluff with a fork.

Step 3
Pour HEINZ® pouch contents into a small saucepan with tomato and spinach. Heat through gently until warm and spinach has wilted. Puree using a handheld blender or food processor.

Step 4
Stir in couscous and serve with a sprinkling of the cheese.
Tip
Substitute spinach for broccoli, peas or zucchini.
Puree Cous Cous with other ingredients if a smoother consistency is required.
