Cut a cross in the base of tomato and plunge into boiling water for 30 seconds. Then place into a bowl of cold water to cool. Remove skin, then halve to remove seeds. Roughly chop.
Place couscous in a small bowl and pour in 2-3 tablespoons boiling water. Allow to sit for 1 minute, then fluff with a fork.
Pour HEINZ® pouch contents into a small saucepan with tomato and spinach. Heat through gently until warm and spinach has wilted. Puree using a handheld blender or food processor.
Stir in couscous and serve with a sprinkling of the cheese.
